<p>Serving Size: 4</p>
<p><strong>Ingredients:</strong><br />
2 tablespoons olive oil<br />
3 large garlic cloves, minced<br />
1 large onion, finely chopped<br />
1 cinnamon stick<br />
1 bay leaf<br />
2 teaspoons fresh ginger root<br />
1 14 1/2 oz can diced tomatoes, drained<br />
1 lb. large shrimp, peeled and deveined<br />
1 can coconut milk<br />
1 tablespoon curry powder<br />
2 tablespoons fresh cilantro, finely chopped<br />
1 cup jasmine rice, steamed</p>
<p><strong>Directions:</strong><br />
1. In a large skillet or wok add olive oil over high heat. Once hot stir in garlic followed by the onion. Cook until onions begin to turn clear.<br />
2. Then add cinnamon, bay leaf,ginger and tomatoes. Bring to a boil.<br />
3. In a medium mixing bowl combine coconut milk and curry. Mix well and set aside.<br />
4. Add in shrimp with boiling mixture. Pour coconut milk mixture in as well and stir.<br />
5. Simmer for 10 minutes.<br />
6. Serve on top of Jasmine rice and sprinkle cilantro on top.</p>

<p>Serving Size: 15</p>
<p><strong>Ingredients:</strong><br />
1 loaf French bread, sliced into 15 pieces<br />
1 lb. shrimp, cooked and chopped<br />
2 garlic cloves, minced<br />
3 tablespoons olive oil, divided<br />
2 teaspoons fresh basil, chopped<br />
1 teaspoon fresh oregano, chopped<br />
1 teaspoon fresh parsley, chopped<br />
2 large tomatoes, diced<br />
1 cup feta cheese<br />
1/2 cup Parmesan cheese, grated</p>
<p><strong>Directions:</strong><br />
1. Preheat oven to 375 degrees.<br />
2. Place bread slices on baking sheet.<br />
3. In a medium mixing bowl combine shrimp, garlic, 2 tablespoons olive  oil, basil, oregano, parsley, and tomatoes.<br />
4. In a small mixing bowl combine the feta and Parmesan cheese.<br />
5. Top bread slices with tomato mixture. Then sprinkle cheese mixture on  top. Finally drizzle with remaining olive oil.<br />
6. Place in oven and bake for 10 minutes or until cheese is melted and  bread in slightly toasted.</p>

<p><strong>Ingredients:</strong><br />
1 tablespoon sesame oil<br />
2 large garlic cloves, minced<br />
1/2 cup shallots, minced<br />
1 tablespoon fresh ginger, finely chopped<br />
1 1/2 lb. shrimp, peeled and deveined<br />
1 tablespoon soy sauce<br />
1 tablespoon ketchup<br />
1 teaspoon sugar<br />
1/2 cup fresh cilantro, finely chopped<br />
1 teaspoon rice vinegar<br />
1/2 teaspoon red pepper flakes<br />
1 cup white rice, prepared</p>
<p><strong>Directions:</strong><br />
1. In a large skillet or wok add in sesame oil over medium-high heat.<br />
2. Once oil in hot add in garlic, shallots, and ginger. Cook for 2  minutes.<br />
3. Add in shrimp.<br />
4. Stirfry for a minute then stir in soy sauce, ketchup, and sugar.<br />
5. Bring to boil and simmer for another minute.<br />
6. Finally add in cilantro, rice vinegar and red pepper. Cook for  additional minute.<br />
7. Serve over cooked rice.</p>
