Garlic Shrimp Bruschetta

Serving Size: 15
Ingredients:
1 loaf French bread, sliced into 15 pieces
1 lb. shrimp, cooked and chopped
2 garlic cloves, minced
3 tablespoons olive oil, divided
2 teaspoons fresh basil, chopped
1 teaspoon fresh oregano, chopped
1 teaspoon fresh parsley, chopped
2 large tomatoes, diced
1 cup feta cheese
1/2 cup Parmesan cheese, grated
Directions:
1. Preheat oven to 375 degrees.
2. Place bread slices on baking sheet.
3. In a medium mixing bowl combine shrimp, garlic, 2 tablespoons olive oil, basil, oregano, parsley, and tomatoes.
4. In a small mixing bowl combine the feta and Parmesan cheese.
5. Top bread slices with tomato mixture. Then sprinkle cheese mixture on top. Finally drizzle with remaining olive oil.
6. Place in oven and bake for 10 minutes or until cheese is melted and bread in slightly toasted.
